The history of this recipe is very funny. When I was 8 I came to her grandmother in the village in the Kemerovo region. Of course I didn't know how to cook anything. And grandma scolded me. How can you - she said. But I'm not worried that not cook at all. My life was just a sport. Grandmother was greatly surprised. She decided to cook one. She did a superb three course meal. After lunch, the whole family went to sleep and my grandmother, too.
And then it hit me! I have what to cook. In the kitchen were raisins and dried apricots. I decided to make a cupcake.
I found the egg, flour, oil and sugar, and mix all ingredients anyhow. Then I put the cake in the oven. Pushed the button and went to play. After an hour I disturbed the smell of cooking. I ran to the kitchen but she was ahead of me. She opened the oven. And we saw only embers. But where is my cupcake? Grandmother laughed for a long time. And then hugged me and told how to prepare a cake. I remember the recipe now.
How to make cupcakes with dried apricots and raisins:
1. Sugar with the eggs beat to foam, add sour cream, baking powder, lemon juice, vanilla, beat again.
2. Melt the butter and butter warm, add to the dough.
3. Sift flour and knead the dough on a consistence, a thick cream.
4. Dried apricots and raisins wash, fill with boiling water for a few minutes to dry. Dried apricots cut, roll in flour together with raisins and add to the dough.
5. Put the dough in the form (slightly less than half of the form) and bake cupcakes with dried apricots at 190C approximately 20-25 minutes.
