There is just one day left before relaxing weekend) One more busy week is done! Most people are already exhausted and it is really hard to wake yourself up on Fridays. In order to raise up your mood and get some strength for the "last struggle" it is really important to start the morning with nice, healthy and , the main point, tasty breakfast. Today I offer you the recipe of coffee and pecan muffins which are easy to cook and it is amazing addition to your morning coffee or tea!

It takes only 20 mins to prepare ingredients and 20 mins to bake!

Ingridients:

300 gr of white flour
2 tea spoons of baking powder
150 gr of unrefined light muscovado sugar
100 gr of pecan nuts
1 egg
225 ml of milk
50 gr of butter
4 spoons of espresso coffee
1 spoon of unrefined demerara sugar

Preparation:

Preheat the oven to 200o. Line two muffin tins with 12 small squares of grease -proof paper. Shift the flour and baking powder into a large mixing bowl and after add the muscovado sugar and nuts. Take another bowl mix together the egg, milk, melted butter and coffee. Gently combine the two mixes together and divide the mixture between the muffin tins. At the end sprinkle over the demerara sugar and bake in the oven for 15 -20 mins. Voila your muffins are ready!)))))))
